Photo Courtesy of Conrad Miami The ever trendy and luxurious Conrad Miami has welcomed a new Executive Chef into its kitchen to create new menus, manage catering operations and oversee prep for the hotel’s own Atrio Restaurant & Wine Room. French Chef Virgile Brandel has earned degrees in Applied Science in Culinary Arts and Tourism and Hospitality Management from the Hospitality and Culinary School in Sur Marne, France. He went on to gain 25 years of experience from various restaurants around Europe that he plans to bring to the downtown Miami property.

He started out in France as an apprentice at a Michelin-starred restaurant in the Champagne region, before being named Chef Tournant at Boccaccio restaurant in Nice, Italy, then went on to London where he was appointed Senior Chef de Partie at The Park Lane Hotel and Junior Sous Chef at The Dorchester Hotel. Brandel isn’t new to Florida however; he previously worked at Waldorf Astoria’s Casa Marina in Key West, the Loews Hotel in Miami Beach and the Eden Roc Hotel before coming to the Conrad.
