Expanding upon their culinary portfolio, which includes St. Barth’s Bonito and Miami’s James Beard award-winning Juvia, husband and wife restaurateurs Jonas and Alexandra Millan will be opening Le Sereno Restaurant. Located inside Hotel le Sereno on St. Barths' Grand Cul de Sac beach, the sophisticated dining destination can seat 100 guests in the indoor and outdoor spaces, serving dishes that feature an intriguing mix of Japanese ingredients with French flavors, highlighting the island’s fresh seafood and produce.
Appetizers include seared tuna salad with sliced scallion, grated ginger, and garlic-chip citrus-soy vinegar dressing; Watermelon Salad with cantaloupe granité, baby arugula, and balsamic reduction; and Wagyu Dumplings with bonito flakes, micro arugula, and parsnip puree. Maple Miso Sea Bass with eggplant chips and grilled swordfish with red pepper mango chutney and baby bok choy are among the entrée selections. For dessert, diners can savor the Tropical Leche, a caramel panna cotta with coconut streusel and mango passion sorbet or a Banana Filo Tart with caramelized bananas and white chocolate encased in a filo shell.
Le Sereno also serves breakfast, with items such as pastries, house-made granola, omelets and the Yuzu Hollandaise Benedict on offer. Executing the inventive creations is Chef de Cuisine Mathieu Gourreau along with a team of renowned chefs including a protégé of Daniel Boulud, Executive Chef Laurent Cantineaux, from Nobu South Beach Executive Chef Sunny Oh, and Executive Pastry Chef Gregory Gourreau who has worked with such greats as Alain Ducasse and Francois Payard. The restaurant serves breakfast, lunch, and dinner daily from 7 a.m. to 10:30 p.m. They also cater on-site events and fill room service orders.
