Hard Rock Hotel & Casino Punta Cana has recently announced the addition of a new restaurant by renowned Chef Kerry Simon. Slated to open at the end of 2012, Mansion by Simon will be the fifth restaurant from Kerry Simon, and the first international restaurant from the restaurateur.
Designed by 555 International, the restaurant will boast multiple rooms including a dining room, living room, bedroom, bathroom, library, studio and patio. The design, headed by James Geier, features a mix of glass and stone, with larger-than-life portraits of Chef Simon, as well as massive thrones that serve as both dining chairs and eye-catching art.

Dubbed the “Rock n’ Roll Chef” by Rolling Stone magazine, Chef Kerry Simon brings his signature contemporary American cuisine to one of the best hotels in the Caribbean. Chef Simon is committed to using only the finest local meat and organic produce for his dishes, which are expected to compliment the restaurant’s new innovative cocktail selection. Mansion by Simon will serve a wide variety of local and imported rums and will have a rum sommelier on-hand to educate guests about the various rums, rum cocktails and how to best pair rum with food.
